Hilton Motif Seattle Debuts Renovated Frolik Kitchen + Cocktails Rooftop

A reimagined rooftop dining experience in Seattle, now open

SEATTLE – May 13, 2026 – Today, Hilton Motif Seattle announces the opening of its reimagined rooftop concept, Frolik Kitchen + Cocktails. Blending elevated dining with laid-back charm, the renovated space features a coastal-inspired menu leaning on the bounty of fresh ingredients from the Pacific Northwest.

Following a transformation that began in May 2025, Frolik Kitchen + Cocktails now offers a refreshed dining and social experience. Open year-round, the 150-seat, 4,000-square-foot rooftop is one of the largest in downtown Seattle, able to accommodate events up to 280 people, making it a standout destination complete with a seasonal menu, signature cocktails, and rotating pop-up activations.

With the reopening of its rooftop patio, Frolik Kitchen + Cocktails also introduces a new spring and summer menu led by Executive Chef Angel Huapaya. Centered on locally sourced ingredients from the Puget Sound, the seasonal menu delivers an elevated take on the regional flavors, featuring fresh seafood, house-grown microgreens, and farm-to-table ingredients in vibrant, thoughtfully composed dishes. Subtle Latin influences, shaped by Chef Huapaya’s Peruvian and Honduran roots, add bold dimension to classic Pacific Northwest cuisine.

Menu highlights include Octopus Carpaccio, carefully prepared for a delicate texture and striking presentation; Peruvian-Style Roasted Chicken, inspired by Chef Huapaya’s heritage and served with sweet potatoes and corn; and a Watermelon Burrata Salad that balances compressed watermelon with creamy burrata, basil pesto, and local micro basil.

Complementing the menu is a curated selection of craft cocktails, local beers and wine, perfect for pairing with panoramic views of the city. Highlights include The Lost Jungle, crafted with Bacardi, Americano Amaro from Fast Penny Spirits, crème de banana, and The Clarified Pear, made with Absolut Pears, ginger liqueur, lemon, and Earl Grey tea.

The rooftop, designed by Degen & Degen, blends modern aesthetic with earthy charm, featuring soft, neutral tones that create a calm, coastal-inspired ambiance. Rattan-style textures are woven throughout the space, from the outdoor light fixtures and chairs to the indoor booth seating, adding an organic elegance that feels effortlessly approachable. Subtle wood accents, cozy seating, and lush greenery complement the open-air setting. A pergola for cooler months and a fireplace hearth with lounge seating extend the rooftop experience year-round.

Frolik Kitchen + Cocktails is located on the 5^th floor of Hilton Motif Seattle at 1415 5^th Avenue. Hours of operation are Monday through Friday between 6:30 AM to 10:00 AM and 11:00 AM to 11:00 PM and Saturday through Sunday from 6:30 AM to 11:00 PM.
